Supreme Pizza Frittata

When I was away for college my dad found a love for making frittatas for weekend brunch. The first time I ever had one of my dad’s frittatas I finally understood what all the hype was about. This recipe came out of a craving for a supreme pizza and a frittata. It should come as no surprise that combining these two foods into one resulted in something I will be making for numerous weekend brunches.

When my partner asked me what I was whipping up when testing this recipe I responded with, “a frittata.” That apparently did not provide him with enough detail as he had never heard of/had a frittata before. The easiest way to describe a frittata is as a rustic quiche without the crust. The base for a frittata is eggs and just a little bit of milk. Becauseย  frittatas do not have a crust this recipe is a great gluten free brunch option.ย 

The supreme pizza part of this recipe comes into play with the fillings for this frittata. Italian sausage, pepperoni, bell pepper, red onion, garlic, mushrooms, spinach, and black olives make this frittata taste like something from your local carry out pizza joint. Adding Italian seasoning, chili flakes, parmesan, and mozzarella to the egg mixture also helps with the pizza taste. However, what really gives this frittata that pizza feel is adding mozzarella cheese to the top and broiling for 2-3 minutes. In a way this frittata reminds me of a Chicago deep dish pizza, but way better!

This recipe may seem like a lot of ingredients but it is super easy to make. Turn oven on to 375 degrees Fahrenheit. Start by whisking together eggs, milk, salt, black pepper, Italian seasoning, chili flakes, parmesan, and 1/2 cup of mozzarella cheese. Set the egg mixture aside. In a 10 inch cast iron pan add a tsp of olive oil and turn the burner to medium. Let the olive oil start to simmer and then add the Italian sausage, bell pepper, and red onion to the cast iron. Cook for 2-3 minutes, stirring occasionally. Add the mushrooms and pepperoni to the pan and cook 2-3 minutes, stirring occasionally. Mix in the spinach and black olives with the other ingredients and turn the burner to low. Whisk the egg mixture again and then add to the cast iron pan. Using a spatula combine the egg mixture with the vegetables and meat. Leave the cast iron on the stove on low for 2-3 minutes, or until the edges start to lighten in colour. Transfer the cast iron to the oven and bake for 7-10 minutes. Remove the frittata from the oven and top with the remaining 1 cup of mozzarella cheese. Bake on broil, until the cheese is golden, 2-3 minutes. Remove the frittata from the oven and let cool 5-10 minutes. Sprinkle with chili flakes and enjoy! In 40 minutes you have a delicious frittata to enjoy with family and friends!

Equipment

  • 10 inch cast iron pan

Ingredients
  

  • 8 eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp chili flakes
  • 1 Tbsp Italian seasoning
  • 2 links Italian sausage
  • 1 cup pepperoni diced
  • 1 cup red bell pepper diced
  • 1/2 cup red onion diced
  • 2 cloves garlic chopped
  • 1/2 cup mushrooms diced
  • 1/2 cup black olives diced
  • 1 cup spinach
  • 1 1/2 cup mozzarella
  • 1/4 cup parmesan
  • 1 tsp olive oil

Instructions
 

  • Preheat oven to 375 degrees Fahrenheit.
  • In a medium size bowl crack eggs. To the eggs add milk, salt, pepper, chili flakes, and Italian seasoning. Whisk to combine. Add parmesan and 1/2 cup of the mozzarella cheese to the egg mixture and whisk to combine. Set mixture aside.
  • In a 10 inch cast iron pan add the olive oil and set to medium heat until the olive oil is simmering. Add to the pan the Italian sausage, bell peppers, red onion to pan and cook with the Italian sausage for 3-5 minutes, stirring occasionally. Next add the mushrooms and pepperoni to the pan and cook for 3-5 minutes. Add the black olives and spinach to the pan and stir to combine with other ingredients in the pan.
  • Whisk the egg mixture again and then pour into the cast iron. Use a spatula to distribute the egg mixture evenly in the pan.
  • Keep the pan on the stovetop on medium heat for 2-3 minutes, until the edges of the frittata turn lighter in color. Transfer the pan carefully to the oven and bake for 7-10 minutes. Once 7-10 minutes have passed and the top of the frittata is slightly cooked, add the rest of the mozzarella cheese to the top of the frittata and turn the oven on broil for 2-3 minutes or until the cheese on top is golden brown.
  • Remove the frittata from the oven and let rest for 5-10 minutes. Sprinkle with chili flakes, cut with a sharp knife, and serve.
